6 large eggs

1 cup fresh spinach, chopped

1 medium zucchini, grated

1/2 cup onion, finely chopped

2 cloves garlic, minced

1/2 cup feta cheese, crumbled

1/4 cup whole milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a bit of heat)

2 tablespoons olive oil or butter

Fresh herbs for garnish (such as basil or parsley)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to prepare for the frittata baking.

    Sauté the Aromatics and Zucchini: In a large, oven-proof skillet, heat 2 tablespoons of olive oil or butter over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant. Then, stir in the minced garlic and grated zucchini, cooking for an additional 2-3 minutes, until the zucchini starts to soften and releases its moisture.

      Incorporate the Spinach: Add the chopped spinach to the skillet, stirring and cooking for about 2 minutes, until the spinach is wilted and combined. Season the mixture with salt, black pepper, and red pepper flakes if you prefer some heat.

        Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, whole milk, and crumbled feta cheese until everything is thoroughly blended and creamy.

          Combine Together: Pour the egg mixture into the skillet over the sautéed vegetables. Using a spatula or a wooden spoon, gently stir to ensure the spinach and zucchini are evenly distributed throughout the egg mixture.

            Cook on Stovetop: Allow the frittata to cook on the stovetop for approximately 3-4 minutes, watching as the edges begin to set and firm up.
