4 medium zucchinis

1 cup marinara sauce (or your choice of pizza sauce)

1 ½ cups shredded mozzarella cheese

½ cup diced green bell pepper

½ cup diced onion

1 teaspoon Italian seasoning

¼ teaspoon garlic powder

Fresh basil leaves, for garnish

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it’s hot and ready for baking.

    Prepare the Zucchini: Take each zucchini and slice it in half lengthwise. Use a spoon to gently scoop out the seeds and some of the flesh, creating a hollow boat. Leave about ¼ inch of zucchini flesh around the edges to keep the structure intact. Lightly season the hollowed-out zucchinis with salt and pepper to enhance their flavor.

      Sauté the Vegetables: In a skillet, heat a drizzle of olive oil over medium heat. Add the diced green bell pepper and onion, sautéing until they are softened and fragrant, which should take about 3-4 minutes.
