Ingredients

2 medium zucchinis

1 cup marinara sauce (either homemade or store-bought)

1 cup shredded mozzarella cheese

1/2 cup sliced pepperoni (or any toppings of your choice)

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional for a spicy kick)

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for baking.

Prepare the Zucchini: Rinse and dry the zucchinis thoroughly. Slice them into 1/2-inch thick rounds, discarding the ends. Lay the slices on a paper towel and sprinkle them lightly with salt. Allow them to rest for about 10 minutes to draw out excess moisture.

Dry the Zucchini: After 10 minutes, use a clean paper towel to pat the zucchini slices dry, absorbing the moisture released by the salt.

Season the Zucchini: In a small mixing bowl, combine the olive oil, garlic powder, Italian seasoning, salt, and pepper. Gently brush or drizzle this mixture generously over one side of each zucchini slice, ensuring they’re well-coated.

Arrange on Baking Sheet: Place the seasoned zucchini slices in a single layer on a baking sheet lined with parchment paper, making sure the seasoned side is facing up.

Pre-Bake the Zucchini: Bake the zucchini slices in the preheated oven for about 10 minutes. This step will help firm them up, creating a sturdy base for your toppings.

Add Marinara and Toppings: Carefully remove the baking sheet from the oven. Using a spoon, add about a teaspoon of marinara sauce onto each zucchini slice. Evenly sprinkle shredded mozzarella cheese over the sauce, followed by your selected toppings (like pepperoni or other vegetables).

Bake Again: Place the baking sheet back in the oven and bake for an additional 10 to 12 minutes, or until the cheese is melted and bubbly with a slight golden color.

Garnish and Serve: Once done, take the zucchini pizza bites out of the oven and let them cool for a few minutes. For an added touch of flavor, garnish with fresh basil leaves if desired. Serve warm as a delectable appetizer or snack.
