Ingredients

4 medium zucchinis, spiralized into noodles

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions

Prepare the Zucchini Noodles: Using a spiralizer, transform each zucchini into long, spaghetti-like noodles (often called zoodles). If you don’t own a spiralizer, a vegetable peeler or mandoline can be used to create thin ribbons instead. After spiralizing, place the zoodles in a colander, sprinkle them lightly with salt, and allow them to rest for about 10 minutes. This process helps to draw out excess moisture. Once rested, pat the zoodles dry with paper towels to remove any leftover moisture.

Chop the Fresh Vegetables: While the zoodles are releasing moisture, wash, and chop the cherry tomatoes, cucumber, red bell pepper, and red onion. Combine all the prepared vegetables in a large mixing bowl for easy tossing later on.

Incorporate Olives and Feta: Gently fold in the Kalamata olives and crumbled feta cheese into the bowl of chopped vegetables, ensuring an even distribution of flavors.

Create the Zesty Dressing: In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper. Taste and adjust the seasoning until it perfectly aligns with your palate.

Combine All Ingredients: Add the thoroughly dried zoodles to the bowl containing the vegetable mixture. Drizzle the freshly made dressing over the ingredients and toss everything together gently, ensuring that the zoodles and vegetables are well-coated in the flavorful dressing.

Garnish and Chill: Sprinkle the chopped fresh parsley generously over the top of the salad. For optimal flavor infusion, consider refrigerating the salad for about 15-20 minutes before serving. This brief chilling allows the flavors to meld beautifully.

Serve and Enjoy: Present the Mediterranean Zoodle Delight in bowls, perfect as a refreshing side dish or a light main course that’s bursting with Mediterranean essence.
