Ingredients

2 medium zucchinis, grated

1 cup fresh corn kernels (or use frozen corn, thawed)

1/2 cup all-purpose flour

1/2 cup cornmeal

2 large eggs

1/4 cup milk (or plant-based alternative)

2 green onions, finely chopped

1 clove garlic, minced

1 teaspoon baking powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

Olive oil, for frying

Fresh herbs (such as cilantro or parsley), for garnish

Optional: sour cream or yogurt, for serving

Instructions

Prepare the Zucchini: Place the grated zucchini into a clean kitchen towel or cheesecloth. Gather the ends of the towel and twist to squeeze out as much moisture as possible. This step is crucial for achieving crispy fritters.

Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cornmeal, baking powder, ground cumin, smoked paprika, salt, and black pepper until evenly blended.

Mix Wet Ingredients: In a separate bowl, beat the eggs. Then whisk in the milk and minced garlic until well incorporated. Add the drained zucchini and the fresh corn kernels to this mixture, followed by the finely chopped green onions, stirring gently to combine.

Combine Mixtures: Pour the wet ingredient mixture into the bowl containing the dry ingredients. Stir until just mixed; be careful not to overmix. The batter should be thick, yet spreadable.

Heat the Oil: In a large skillet, heat approximately 2 tablespoons of olive oil over medium heat until shimmering.

Fry the Fritters: Using a 1/4 cup measuring cup, drop spoonfuls of batter into the hot skillet. Lightly flatten each fritter with the back of a spatula. Fry for 3-4 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to avoid burning.

Drain and Serve: Once cooked, transfer the fritters to a paper towel-lined plate to absorb excess oil. Continue frying until all the batter is completed, adding extra olive oil to the skillet as needed.

Garnish and Enjoy: Serve the fritters warm, beautifully garnished with fresh herbs. Enhance your dish with a drizzle of sour cream or yogurt on top for a delightful finish.
