2 medium zucchini, sliced into ½-inch thick rounds

1 pound boneless, skinless chicken breasts, sliced thin (about ½ inch thick)

1 cup Italian seasoned breadcrumbs

½ cup grated Parmesan cheese

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Fresh basil leaves, for garnish

Olive oil spray or 2 tablespoons olive oil

    Prepare the Zucchini: Lay the sliced zucchini rounds on a clean kitchen towel and sprinkle them lightly with salt. Allow the zucchini to rest for about 15 minutes; this will help draw out excess moisture. After resting, pat them dry with another piece of towel to remove any released moisture.

      Prepare the Chicken: In a shallow mixing bowl, combine the breadcrumbs, garlic powder, oregano, salt, black pepper, and half of the grated Parmesan cheese. In a separate bowl, beat the eggs until fully blended.

        Coat the Chicken: Take each slice of chicken and first dip it into the beaten eggs, allowing any excess to drip back into the bowl. Next, coat each piece thoroughly with the breadcrumb mixture, gently pressing the breadcrumbs onto the chicken to ensure an even layer.
