Instructions

Marinate the Shrimp: In a large mixing bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, chopped parsley, chopped cilantro, smoked paprika, chili powder, salt, and black pepper until well combined. Add the peeled and deveined shrimp to the marinade, tossing gently to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the shrimp to absorb all the flavorful ingredients.

Prepare the Creamy Lime Sauce: In a separate small bowl, combine the sour cream (or Greek yogurt), lime juice, honey, and a pinch of salt and black pepper. Whisk until the mixture is smooth and creamy. Cover and place in the refrigerator to chill while you prepare the shrimp and tortillas.

Grill the Shrimp: Preheat your grill to medium-high heat. If using skewers, thread the marinated shrimp onto them for easy grilling. Grill the shrimp for about 2-3 minutes on each side or until they are transformed into a beautiful pink color and are opaque throughout. Be careful not to overcrowd the grill; grill in batches if needed to ensure even cooking.

Warm the Tortillas: While the shrimp are grilling, quickly warm the tortillas on the grill for approximately 30 seconds on each side, or until they are pliable and have a slight char for added flavor.

Assemble the Tacos: Once the shrimp are grilled to perfection, remove them from the skewers. To assemble, place a generous handful of finely sliced red cabbage on each warm tortilla. Top with a few of the grilled shrimp, slices of creamy avocado, and a sprinkle of crumbled feta cheese if desired. Drizzle a generous amount of the creamy lime sauce over the top and finish with fresh cilantro leaves for a burst of color.

Serve: Present the tacos immediately with lime wedges on the side, providing guests with the option to add an extra zing of citrus to each bite.
