Ingredients

2 cups rolled oats

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

2 cups almond milk (or milk of your choice)

1/4 cup pure maple syrup (or honey if preferred)

1 teaspoon vanilla extract

1 large egg (or 1 flax egg for a vegan option)

1 1/2 cups fresh or frozen blueberries

1/4 cup chopped nuts (optional, such as walnuts or pecans)

1/4 cup unsweetened shredded coconut (optional)

Cooking spray or muffin liners

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 12-cup muffin tin by spraying it with cooking spray or lining it with muffin liners to prevent sticking.

Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Use a whisk or spoon to mix these ingredients well until they are evenly distributed.

Whisk Together the Wet Ingredients: In a separate bowl, whisk together the almond milk, pure maple syrup, vanilla extract, and the egg (or flax egg) until the mixture is smooth and fully blended.

Combine Wet and Dry Ingredients: Carefully pour the whisked wet mixture into the bowl containing the dry oat ingredients. Stir gently until everything is well combined. If using, fold in the chopped nuts and shredded coconut along with the blueberries. Be gentle to preserve the integrity of the blueberries.

Fill the Muffin Tin: Using a ladle or spoon, fill each muffin cup with the oatmeal mixture, making sure to fill them about three-quarters of the way full. For a visually appealing presentation, ensure some blueberries are peeking through the top of each cup.

Bake to Perfection: Place the filled muffin tin in the preheated oven and bake for 20-25 minutes. They are ready when the tops turn golden brown, and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, allow the oatmeal cups to cool in the muffin tin for approximately 10 minutes. After that, transfer them to a wire rack to cool completely. These delightful cups can be enjoyed warm or at room temperature, either plain or with a topping of yogurt or a drizzle of extra maple syrup.

Store for Later Enjoyment: If you have any leftovers, store them in an airtight container in the refrigerator for up to 4 days, or freeze them for up to 3 months. When you're ready to enjoy them again, simply reheat in the microwave or toaster oven.
