1 cup dry vermicelli noodles

1 cup shredded carrots

1 cup cucumber, julienned

1 cup bean sprouts

Leafy lettuce (such as butter or romaine)

For the Peanut Dip:

1/2 cup peanut butter (smooth or chunky to your preference)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sriracha (adjust for spice level)

1-3 tablespoons warm water (to achieve desired consistency)

Chopped peanuts (for garnish)

Fresh cilantro (for garnish)

Prepare the Vermicelli Noodles: Begin by boiling water in a pot, then add the dry vermicelli noodles. Cook according to the package instructions—usually about 3-4 minutes. Once done, drain and rinse under cold running water to cool. Set aside.

    Prepare the Ingredients: Thoroughly wash all your vegetables and fresh herbs. If using shrimp, slice them in half lengthwise; if using tofu, dice it into small cubes. Prepare the carrots, cucumber, and any additional greens you’re using.

      Make the Peanut Dip: In a medium mixing bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey or maple syrup, and sriracha. Slowly add warm water a tablespoon at a time until you achieve a smooth, dippable consistency. Transfer the dip to a serving bowl and garnish with chopped peanuts and fresh cilantro.

        Assemble the Spring Rolls:

          - Fill a large, shallow dish or a wide pan with warm water for soaking the rice papers.
