2 ripe avocados

1 cup fresh sweet corn kernels (or use canned or frozen as needed)

1 small red onion, finely chopped

1 medium jalapeño, deseeded and minced (optional, for a touch of heat)

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

Salt and black pepper, to taste

4 slices of sourdough or whole-grain bread

Olive oil, for drizzling

Crumbled feta cheese (optional, for added creaminess)

Red pepper flakes (optional, for garnish)

Instructions
 

Prepare the Corn: If using fresh sweet corn, bring a medium pot of water to a boil. Add the corn kernels and cook for 3-5 minutes, or until tender. Drain well and set aside to cool. If using canned or frozen corn, simply proceed to the next step.

    Mash the Avocados: Halve the ripe avocados and remove the pit. Scoop the flesh into a medium bowl. Using a fork, mash the avocados to your preferred texture, whether smooth or a bit chunky. Squeeze the lime juice into the mixture to add flavor and prevent browning.

      Make the Corn Salsa: In a separate bowl, combine the cooked corn, finely chopped red onion, minced jalapeño (if using), chopped cilantro, and a pinch of salt and black pepper. Gently toss to combine all the ingredients evenly.

        Toast the Bread: Preheat a grill pan or toaster over medium heat. Toast each slice of bread until golden brown and slightly crispy, approximately 3-4 minutes per side.
