1 cup Medjool dates, pitted

1 cup unsweetened shredded coconut, plus extra for coating (if desired)

1/2 cup raw almonds (or nuts of your choice, like cashews or walnuts)

1/4 cup almond butter (or peanut butter for a different flavor)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional toppings: cacao nibs, chopped pistachios, or additional shredded coconut for rolling

Prepare the Dates: If your Medjool dates are firm, soak them in warm water for about 10 minutes to soften their texture. After soaking, thoroughly drain the dates and pat them dry with a paper towel.
