Sweet Cinnamon Sugar Churros

1 cup water

2 tablespoons granulated sugar

1/2 teaspoon salt

1/2 cup unsalted butter (cut into pieces)

1 cup all-purpose flour

2 large eggs (at room temperature)

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

1/2 cup granulated sugar (for coating)

2 teaspoons ground cinnamon

Instructions
 

Prepare the Dough: In a medium saucepan, combine water, 2 tablespoons granulated sugar, salt, and the cut pieces of butter. Place the saucepan over medium heat and bring the mixture to a rolling boil. Once boiling, remove the saucepan from heat and immediately stir in the flour until a cohesive ball of dough forms, ensuring there are no dry flour bits remaining.

    Incorporate Eggs and Vanilla: Allow the dough to cool for about 5 minutes, ensuring it’s not too hot to handle. Next, add the eggs one at a time, beating well after each addition until fully incorporated. Stir in the vanilla extract at the end, mixing until the dough is smooth and glossy with a pipeable consistency.

      Heat the Oil: In a deep frying pan or heavy pot, pour in enough oil to achieve a depth of about 2 inches. Heat the oil to 350°F (175°C) over medium heat. Use a kitchen thermometer to monitor the temperature for optimal frying.

        Prepare Cinnamon Sugar Mixture: In a small bowl, mix together the 1/2 cup granulated sugar and ground cinnamon. Set this mixture aside for coating the churros once they are fried.
