4 salmon fillets (6-8 oz each)

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon ginger powder

1 tablespoon olive oil

Salt and pepper to taste

Chopped green onions (for garnish)

Sesame seeds (for garnish)

For the Fluffy Coconut Rice:

1 cup jasmine rice

1 1/2 cups coconut milk

1/2 cup water

1 tablespoon sugar

1/2 teaspoon salt

Fresh lime wedges (for serving)

For the Sweet Chili Glazed Salmon:

    In a mixing bowl, combine the sweet chili sauce, soy sauce, honey, garlic powder, and ginger powder. Whisk until the mixture is smooth and evenly blended.

      Season both sides of the salmon fillets with salt and pepper to enhance their flavor.

        Heat the olive oil in a large skillet over medium-high heat until shimmering.

          Carefully place the salmon fillets into the skillet, skin side down if they have skin. Sear the salmon for approximately 4 minutes, or until it develops a beautiful golden crust.

            Gently flip the salmon fillets and pour the prepared sweet chili glaze over the tops. Continue cooking for an additional 3-4 minutes, or until the salmon flakes easily with a fork and the glaze has thickened slightly.

              Remove the skillet from heat and allow the salmon to rest for one minute before serving, which helps enhance its juiciness.

                For the Fluffy Coconut Rice:

                  Rinse the jasmine rice in cold water until the water runs clear, a step that removes excess starch and prevents the rice from becoming mushy.

                    In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt. Stir gently to mix the ingredients.

                          Remove the saucepan from heat and keep it covered for an additional 5 minutes to allow the rice to steam. After that, use a fork to fluff the rice gently before serving.
