Ingredients

1 pound baby carrots (or 4-5 medium regular carrots, sliced)

1/4 cup unsalted butter

1/4 cup packed brown sugar

1 tablespoon honey

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

Prep the Carrots: For regular carrots, start by peeling them and cutting into uniform pieces about 1/4-inch thick. If using baby carrots, simply rinse them under cold water to remove any dirt, then set them aside.

Cook the Carrots: In a large pot, bring salted water to a boil. Carefully add the carrots and blanch for 5-7 minutes, until they are tender yet still have a slight crunch. Once cooked, drain the carrots and set them aside to allow any excess water to evaporate.

Make the Glaze: In a large skillet over medium heat, melt the unsalted butter, swirling occasionally. Once melted, add the brown sugar, honey, salt, black pepper, and ground cinnamon. If using, add the nutmeg for added warmth. Stir continuously until the sugar is fully dissolved and the mixture starts bubbling gently.

Glaze the Carrots: Carefully add the cooked carrots to the skillet. Gently toss the carrots in the glaze, ensuring they are fully coated. Reduce the heat to low and let them simmer for an additional 4-5 minutes, stirring occasionally, until the carrots are tender and the glaze has thickened slightly.

Serve: Remove the skillet from the heat and transfer the beautifully glazed carrots to a serving dish. Generously sprinkle with freshly chopped parsley for a pop of color and serve warm alongside your favorite main dishes.
