2 cups cooked chicken, shredded (you can use grilled or rotisserie chicken)

1/2 cup BBQ sauce (your favorite store-bought variety or homemade)

1/2 cup sweet corn, drained

1/2 cup black beans, rinsed and drained

1 red bell pepper, diced into small cubes

1 small red onion, thinly sliced

1 cup fresh spinach leaves, rinsed and dried

1 avocado, sliced

1/2 cup shredded cheddar cheese (or your preferred cheese)

4 large flour tortillas

1 tablespoon olive oil

Salt and pepper to taste

Optional: Chopped fresh cilantro for garnish

Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken with the BBQ sauce. Stir until the chicken is thoroughly coated in the sauce. Set this mixture aside to allow the flavors to meld.

    Sauté Vegetables: Heat a skillet over medium heat and add the olive oil. Once the oil is hot, add the diced red bell pepper and thinly sliced red onion. Sauté for approximately 5-7 minutes, stirring occasionally, until the vegetables are softened. Season with salt and pepper to taste during cooking.

      Combine Ingredients: In a large bowl, add the sautéed vegetables to the BBQ chicken mixture. Then, stir in the sweet corn, rinsed black beans, and fresh spinach leaves. Gently fold the ingredients together until they are evenly mixed.

        Assemble the Wraps: Take a flour tortilla and lay it flat on a clean surface. Scoop a generous portion of the chicken mixture into the center of the tortilla. Top this with slices of avocado and a handful of shredded cheddar cheese.

          Wrap It Up: To securely wrap the tortilla, fold the sides inward, then roll the bottom edge tightly over the filling. Continue rolling until the wrap is completely enclosed. Repeat this with the remaining tortillas and filling.

            Optional – Toast the Wraps: For an extra crunch, place the wraps seam-side down in a non-stick skillet over medium heat. Toast each side for about 2-3 minutes, or until they are golden brown and crispy to your liking.

              Serve: Once toasted (if desired), slice the wraps in half diagonally to reveal the colorful filling. Serve them warm and garnish with chopped fresh cilantro for an added burst of flavor.
