2 cups rolled oats

1 cup almond flour

1/2 cup honey or maple syrup

1/2 cup almond butter (or any nut butter of your choice)

1/2 cup sliced almonds

1/4 cup dried cranberries (or substitute with raisins)

1/4 cup unsweetened shredded coconut

1/2 teaspoon ground cinnamon

1/4 teaspoon sea salt

1 teaspoon pure vanilla extract

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, ensuring some overhang on the sides for easy removal later. Set aside.

    Prepare Dry Ingredients: In a large mixing bowl, add the rolled oats, almond flour, sliced almonds, dried cranberries, shredded coconut, cinnamon, and sea salt. Stir the mixture thoroughly to ensure all dry ingredients are well combined and evenly distributed.

      Mix Wet Ingredients: In a separate medium bowl, combine honey (or maple syrup), almond butter, and vanilla extract. Whisk together until the mixture is smooth and homogenous.

        Combine Both Mixtures: Pour the wet mixture into the bowl containing the dry ingredients. Stir vigorously until everything is fully incorporated. You should end up with a thick, sticky dough that holds together well.

          Transfer to Baking Dish: Scrape the mixture into the prepared baking dish. Use a spatula or your fingers to press the dough firmly into the corners and flatten the top for an even surface.

            Bake: Place the dish in the preheated oven and bake for 25-30 minutes. Keep a close eye on them, and remove from the oven when the edges turn a lovely golden brown.

              Cool and Cut: Allow the bars to cool in the pan for about 10 minutes. Using the parchment overhang, lift the mixture out of the dish and transfer it to a cutting board. Let it cool completely before slicing into squares or bars.
