Spinach Mushroom Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup mushrooms, finely chopped (button or cremini)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

Salt and black pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Set your oven to preheat at 375°F (190°C).

    Cook the Pasta: In a large pot of boiling salted water, add the jumbo pasta shells. Cook them according to the package instructions until they are al dente. Once cooked, drain the shells and set them aside to cool.

      Prepare the Filling: Heat a splash of olive oil in a large skillet over medium heat. When hot, add the minced garlic and finely chopped mushrooms. Sauté for 5-7 minutes, or until the mushrooms are tender and have released their moisture.

        Add Spinach: Stir in the chopped spinach with the mushrooms and continue cooking for an additional 2-3 minutes until the spinach has wilted. Remove the skillet from heat and let the mixture cool for a few minutes.

          Combine Filling Ingredients: In a large mixing bowl, combine the sautéed mushroom-spinach blend with ricotta cheese, half of the shredded mozzarella, grated Parmesan, the egg, onion powder, oregano, and a pinch of salt and pepper. Mix thoroughly until all ingredients are well integrated.

            Stuff the Shells: Spread approximately 1/2 cup of marinara sauce evenly across the bottom of a 9x13 inch baking dish. Using a spoon, carefully stuff each of the cooked jumbo shells with the spinach and mushroom filling. Place the filled shells in the baking dish, open side up.

              Top with Sauce and Cheese: Pour the remaining marinara sauce over the stuffed shells, ensuring they are evenly coated. Finally, sprinkle the remaining mozzarella cheese generously on top.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After this time, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and golden.

                  Garnish and Serve: Once baked, allow the stuffed shells to cool for about 5 minutes. Garnish with fresh basil leaves if desired, and serve warm. Enjoy every bite!
