Spicy Chili Chicken Hand Pies

1 lb boneless, skinless chicken thighs, diced

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 bell pepper, diced (choose red or green for color contrast)

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust based on your spice preference)

1/2 cup canned black beans, drained and rinsed

1/2 cup corn kernels (fresh or frozen)

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

1 egg (for egg wash)

Instructions
 

Make the Dough:
