1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chiles

2 tablespoons taco seasoning (store-bought or homemade)

1 teaspoon smoked paprika

½ teaspoon ground cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

1 tablespoon olive oil

Optional toppings: sour cream, avocado, lime wedges, and sliced jalapeños

      Sauté the Vegetables: Incorporate the minced garlic and diced red bell pepper into the skillet with the turkey. Continue to cook for an additional 2-3 minutes, stirring until the bell pepper softens slightly.

        Combine Ingredients: Stir in the black beans, corn, and canned diced tomatoes with green chiles (including the juice). Add the taco seasoning, smoked paprika, and ground cumin. Mix everything well, ensuring the spice blend evenly coats the mixture.

          Simmer: Allow the mixture to come to a gentle simmer. Cook for about 5 minutes, stirring occasionally, to let the flavors meld. Taste the mixture and season with salt and pepper as needed.
