12 lasagna noodles

2 cups ricotta cheese

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese (divided)

1 large egg

2 tablespoons fresh basil, chopped (or 1 tablespoon dried basil)

1 teaspoon garlic powder

2 cups marinara sauce (store-bought or homemade)

Salt and pepper to taste

Fresh parsley, for garnish (optional)

Instructions
 

Cook the Lasagna Noodles: Fill a large pot with water, add a generous pinch of salt, and bring to a boil. Add the lasagna noodles and cook according to the package instructions until they are al dente. Drain the noodles carefully and lay them flat on a clean kitchen towel to cool completely, ensuring they don’t stick together.

    Prepare the Cheese Filling: In a medium mixing bowl, combine the ricotta cheese, grated Parmesan cheese, 1 cup of the shredded mozzarella cheese, egg, chopped basil, and garlic powder. Season with salt and pepper. Mix thoroughly until all ingredients are smoothly blended and set aside.

      Assemble the Roll-Ups: Take one lasagna noodle and lay it flat on a clean surface. Using a spatula or the back of a spoon, spread approximately 2 to 3 tablespoons of the cheese filling over the noodle, covering it evenly. Carefully roll the noodle up tightly from one end to the other. Repeat this process for the remaining noodles and the cheese filling.

        Layer in the Slow Cooker: Begin by spreading a thin layer of marinara sauce on the bottom of the slow cooker to prevent sticking. Place the roll-ups seam-side down in the slow cooker, positioning them snugly side by side. Pour the remaining marinara sauce over the roll-ups, ensuring that they are fully coated. Finally, sprinkle the remaining 1 cup of mozzarella cheese over the top.

          Cook: Cover the slow cooker with its lid and cook on low for 4 to 5 hours or on high for 2 to 3 hours, or until the cheese has melted and is bubbly and golden.

            Serve: After cooking, carefully lift the lasagna roll-ups from the slow cooker using a spatula. Plate them and spoon extra marinara sauce over the top. For a burst of color and flavor, garnish with fresh parsley if desired.
