Ingredients

1 lb ground beef (or your choice of meat substitute, such as turkey or plant-based ground)

8 oz smoked sausage, cut into thin slices

4 oz pepperoni, quartered

1 medium onion, finely diced

2 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth (or vegetable broth for a lighter option)

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and black pepper, to taste

1 cup shredded cheddar cheese (plus additional for serving)

½ cup sliced black olives (for topping)

¼ cup chopped chives or green onions (for garnish)

Optional: Sour cream for a delicious creamy finish

Instructions

Brown the Ground Meat: In a medium skillet over medium heat, add the ground beef. Cook until browned and no longer pink, about 5-7 minutes. Once cooked, drain any excess fat and transfer the beef to the slow cooker.

Incorporate Sausages and Pepperoni: Add the sliced smoked sausage and the quartered pepperoni to the slow cooker with the browned beef. Stir to combine all the meats.

Add Fresh Vegetables: Toss in the diced onion, minced garlic, and diced red bell pepper. Give everything a good stir to integrate the vegetables with the meat.

Combine Beans and Tomatoes: Pour in the drained kidney beans, rinsed black beans, and undrained diced tomatoes. Then, add the beef broth. Stir thoroughly to ensure all ingredients are well mixed.

Season with Spices: Sprinkle the chili powder, ground cumin, smoked paprika, oregano, salt, and pepper over the mixture. Mix well to ensure every bite is infused with flavor.

Slow Cook to Perfection: Cover the slow cooker with the lid. Set to cook on low for 6-8 hours or on high for 3-4 hours. Allow the chili to simmer until it reaches a bubbling, aromatic state and the flavors meld beautifully.

Melt in the Cheese: About 15 minutes before you’re ready to serve, stir in the shredded cheddar cheese. Mix until it melts into the chili, creating a creamy texture.

Serve with Flair: Ladle the hearty chili into serving bowls. Top each bowl with sliced black olives, additional cheddar cheese, and a sprinkle of fresh chives or green onions. For an added touch of richness, add a dollop of sour cream if desired.
