Skillet Cheesy Broccoli & Rice Bake

Ingredients
  

1 cup uncooked long grain or jasmine rice

2 cups vegetable broth or chicken broth

3 cups fresh broccoli florets

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely diced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup sour cream

1/2 cup milk

1/4 cup grated Parmesan cheese (for topping)

Instructions
 

In a large skillet, warm the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes soft and translucent.

    Incorporate the minced garlic and cook for an additional minute until it releases its aroma.

      Add the uncooked rice to the skillet, giving it a good stir with the onion and garlic for roughly 2 minutes to lightly toast the rice.

        Introduce the vegetable or chicken broth to the skillet, along with the paprika, salt, and black pepper. Bring the mixture to a gentle simmer.

          Once simmering, cover the skillet with a lid and lower the heat to a simmer. Cook for 15 minutes until the rice is tender and most of the liquid has evaporated.

            While the rice cooks, blanch the broccoli florets in boiling water for 2-3 minutes. Drain and set aside.

              After 15 minutes, take the skillet off the heat and mix in the blanched broccoli, sour cream, and milk until everything is well blended.

                Gently fold in the shredded cheddar and mozzarella cheeses, ensuring an even distribution.

                  Preheat your oven to 375°F (190°C).

                    Sprinkle the mixture in the skillet with grated Parmesan cheese.

                      Place the skillet in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and golden brown on top.
