Ingredients

1 pound flank steak, thinly sliced against the grain

2 tablespoons olive oil, plus more for sautéing

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and freshly ground black pepper, to taste

2 large bell peppers (1 red, 1 green), sliced into thin strips

1 medium onion, sliced

3 cloves garlic, minced

2 medium limes (1 for juicing, 1 for wedges)

Fresh cilantro, chopped, for garnish

Tortillas (flour or corn, your preference)

Optional toppings: sour cream, guacamole, shredded cheese, salsa

Instructions

Marinate the Beef:

In a medium bowl, combine the thinly sliced flank steak with 2 tablespoons of olive oil, ground cumin, smoked paprika, chili powder, garlic powder, onion powder, and a generous pinch of salt and pepper. Mix well so that the steak is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for a deeper flavor.

      Heat Up the Skillet:

Preheat a large cast-iron skillet or grill pan over high heat until it is very hot. This high temperature is crucial for achieving a delightful sizzling effect once the marinated beef is added.

          Sauté the Vegetables:

Add a splash of olive oil to the hot skillet. Once the oil is shimmering, add the sliced bell peppers, onion, and minced garlic. Sauté for about 3-4 minutes, stirring occasionally, until the vegetables have softened slightly and are beginning to char, but still retain some crispness. Once done, transfer them to a plate and set aside.

              Cook the Beef:

In the same hot skillet, add the marinated flank steak in a single layer. If the pan is too small, cook the beef in batches to avoid overcrowding. Sear for about 2-3 minutes without stirring, allowing the steak to form a rich brown crust. Flip the pieces and cook for another 1-2 minutes, adjusting the time depending on your preferred level of doneness—medium-rare is generally recommended for flank steak.

                  Combine and Squeeze:

Once the beef is cooked, return the sautéed vegetables to the skillet with the steak. Squeeze the juice of one lime over the mixture and stir to combine. Cook for an additional minute until everything is heated through and well incorporated.

                      Serve Sizzling:

Transfer the sizzling fajita mixture to a large serving platter. Garnish with chopped fresh cilantro and lime wedges for an extra burst of flavor. Serve immediately alongside warm tortillas and your choice of optional toppings like sour cream, guacamole, shredded cheese, and salsa.

                          Enjoy!:

Allow everyone to assemble their own fajitas by filling tortillas with the beef and veggie mixture and customizing with their favorite toppings.
