Ingredients

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/4 cup soy sauce

1 tablespoon honey

1 cup fresh blueberries

1 teaspoon cornstarch dissolved in 1 tablespoon water

1 head of butter or romaine lettuce, leaves separated

1/2 cup shredded carrots

1/4 cup chopped green onions

1/4 cup chopped cilantro (optional)

Lime wedges for serving

Salt and pepper to taste

Instructions

Prepare the Blueberry Glaze: In a small saucepan, combine the fresh blueberries, soy sauce, honey, and minced garlic. Heat the mixture over medium heat, stirring occasionally, until the blueberries begin to break down and release their juices, about 5 minutes.

Thicken the Glaze: Stir in the cornstarch mixture (1 teaspoon cornstarch mixed with 1 tablespoon water) and continue cooking for an additional 2-3 minutes or until the sauce thickens to a syrupy consistency. Once thickened, remove from heat and set aside for later use.

Cook the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the peeled and deveined shrimp, along with the grated ginger, salt, and pepper. Cook, stirring occasionally, until the shrimp turn pink and opaque, approximately 3-4 minutes.

Combine Shrimp and Glaze: Once the shrimp are cooked, pour the blueberry glaze over them in the skillet. Stir gently to ensure that each shrimp is well coated with the glaze. Allow the mixture to simmer for about 1 minute to meld the delightful flavors together.

Assemble the Wraps: Take a lettuce leaf and add a generous spoonful of the glazed shrimp into the center. Top with a sprinkle of shredded carrots and chopped green onions for added crunch. If desired, add some freshly chopped cilantro for an extra burst of flavor.

Serve: Finish the wraps by squeezing fresh lime juice over the top of each one. Serve immediately with extra blueberry glaze on the side for dipping, allowing guests to customize their wraps.
