Ingredients
  

1 pound Italian sausage links (choose sweet or spicy according to your taste)

2 cups baby potatoes, cut in half or quarters

2 cups bell peppers, diced (any color you prefer)

1 medium red onion, sliced thin

2 cups zucchini, cut into half-moons

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnishing)

Instructions
 

Set your oven to preheat at 400°F (200°C).

    In a large mixing bowl, combine the halved baby potatoes, diced bell peppers, thinly sliced red onion, and half-moon sliced zucchini.

      Pour the olive oil over the vegetables and add the garlic powder, onion powder, dried oregano, dried thyme, along with salt and pepper. Toss everything until the vegetables are thoroughly coated.

        Distribute the seasoned vegetables evenly on a large sheet pan.

          Slice the Italian sausage links into 1-inch chunks and sprinkle them over the veggies on the sheet pan.

            Bake the sheet pan in the preheated oven for 25-30 minutes, or until the vegetables are tender and the sausage is thoroughly cooked, stirring halfway through for even roasting.

              Once cooked, take the pan out of the oven and allow it to cool for a few minutes. Garnish with fresh chopped parsley for added color and taste.
