4 large bell peppers (any color)

1 pound ground turkey

1 cup cooked quinoa or rice

2 cups fresh spinach, chopped

1 small onion, finely diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon freshly ground black pepper

1 cup shredded mozzarella cheese

1 can (14.5 oz) diced tomatoes, drained

2 tablespoons olive oil

Fresh basil or parsley, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Bell Peppers: Carefully slice the tops off the bell peppers and remove the seeds and membranes. Optionally, brush the outside of the peppers lightly with olive oil or spray with non-stick cooking spray. Arrange the peppers upright in a baking dish.
