1 loaf of day-old French bread, cut into 1-inch cubes (approximately 8 cups)

1 pound Italian sausage (choose between mild or spicy based on your preference)

1 large yellow onion, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

4 cloves garlic, minced

8 large eggs

2 cups milk

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by greasing it well with butter or cooking spray to prevent sticking.

    Cook the Sausage: In a large skillet, heat over medium heat and add the Italian sausage. Cook for about 8-10 minutes, stirring occasionally, until the sausage is fully browned and cooked through. Break it into smaller pieces as you cook. Once done, transfer it to a plate, draining off any excess grease.

      Sauté the Vegetables: In the same skillet, add 2 tablespoons of olive oil. When hot, add the diced onion and bell peppers. Sauté for about 5-7 minutes until they become tender and the onion is translucent. Stir in the minced garlic and cook for an additional 1-2 minutes, allowing the garlic to become fragrant. Season with salt, pepper, oregano, and basil, then remove from heat.
