Ingredients

4 large bell peppers (any color, such as red, yellow, green, or orange)

1 pound ground chicken

1 cup cooked quinoa (or substitute with cooked rice)

1 cup marinara sauce (plus extra for drizzling on top)

1 cup shredded mozzarella cheese (divided: ½ cup for filling, ½ cup for topping)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried Italian herbs (mix of oregano, basil, and thyme)

1 teaspoon red pepper flakes (optional, for added heat)

Salt and pepper to taste

Fresh basil leaves (for garnishing)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Prepare the Peppers: Carefully cut the tops off each bell pepper and remove the seeds and membranes inside. Lightly brush the outside of the peppers with olive oil and sprinkle a pinch of salt on them. Arrange the peppers cut-side up in a baking dish, ensuring they stand upright.

Cook the Chicken: In a large skillet over medium heat, drizzle a little olive oil. Add the minced garlic and sauté for about 1 minute until it's fragrant. Then, add the ground chicken, seasoning it with salt and pepper. Cook the chicken, breaking it apart with a spoon, until it's browned and fully cooked through, approximately 6-8 minutes.

Combine the Filling: In a spacious mixing bowl, combine the cooked chicken mixture with the cooked quinoa, marinara sauce, half of the shredded mozzarella cheese, grated Parmesan cheese, dried Italian herbs, and red pepper flakes (if you choose to add some heat). Mix everything thoroughly until well combined.

Stuff the Peppers: Use a spoon to evenly fill each bell pepper with the savory chicken mixture, packing it tightly to ensure they are well-stuffed. Drizzle a bit of extra marinara sauce over the top of each stuffed pepper, then sprinkle with the remaining mozzarella cheese.

Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and continue baking for an additional 10-15 minutes until the cheese is melted, bubbly, and the peppers are tender.

Garnish and Serve: Once baked, carefully remove the dish from the oven and let the peppers cool for a few minutes. For an aromatic touch, garnish each pepper with fresh basil leaves before serving.

Enjoy your delicious and hearty Savory Chicken Parmesan Stuffed Peppers!
