1 lb (450g) beef chuck, cut into 1-inch cubes

4 cups beef broth (or stock)

2 cups water

1 small head of green cabbage, chopped into bite-sized pieces

2 large carrots, diced into small cubes

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 bay leaf

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 cup diced tomatoes (canned or fresh)

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add the cubed beef and season generously with salt and pepper. Sear the beef on all sides until well-browned, about 5-7 minutes. After browning, remove the beef from the pot and set aside on a plate.

    Sauté the Aromatics: In the same pot, add the finely chopped onion. Cook, stirring occasionally, until the onion becomes translucent and softens, approximately 3-4 minutes. Next, add the minced garlic and sauté for an additional minute until the garlic is fragrant and lightly golden.

      Build the Soup Base: Return the seared beef to the pot with the sautéed onions and garlic. Pour in the beef broth and water, using a wooden spoon to scrape up any brown bits that have formed at the bottom of the pot, as these add flavor. Add the chopped cabbage, diced carrots, diced tomatoes, Worcestershire sauce, dried thyme, smoked paprika, and bay leaf into the pot. Mix well to combine all the ingredients.

        Simmer: Increase the heat and bring the mixture to a gentle boil. Once boiling, reduce the heat to low and cover the pot with a lid. Allow the soup to simmer for about 1 hour, stirring occasionally, until the beef is tender and the flavors have melded beautifully.

          Final Seasoning: After an hour, remove the bay leaf from the pot. Taste the soup, and adjust the seasoning with more salt, pepper, or Worcestershire sauce if needed to suit your palate.
