Ingredients

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite flavor)

1 ½ cups shredded sharp cheddar cheese

½ cup shredded mozzarella cheese

1 small red onion, thinly sliced

1 bell pepper (any color), thinly sliced

8 large flour tortillas

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Optional toppings: sour cream, guacamole, fresh jalapeños, and chopped fresh cilantro

Instructions

Prepare the Chicken Mixture:

In a medium-sized mixing bowl, combine the shredded chicken with the BBQ sauce. Toss the chicken thoroughly in the sauce until fully coated. Feel free to adjust the amount of BBQ sauce to suit your taste preferences, adding more if you like it saucier.

      Sauté the Vegetables:

In a large skillet, heat olive oil over medium heat. Add the thinly sliced red onion and bell pepper. Sauté the vegetables for about 5-7 minutes, stirring occasionally, until softened and slightly caramelized. Season with garlic powder, onion powder, salt, and pepper, mixing well. Remove from heat and set the sautéed mixture aside.

          Assemble the Quesadillas:

On a clean, flat surface, place one tortilla. Spread approximately ¼ cup of the BBQ chicken mixture over one half of the tortilla. Sprinkle a generous portion of cheddar and mozzarella cheeses over the chicken, then add a layer of the sautéed vegetables. Fold the tortilla over to encase the filling.

              Cook the Quesadillas:

Clean the skillet and return it to medium heat. If needed, add a small drizzle of olive oil to prevent sticking. Carefully place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla turns golden brown and crispy, with the cheese melted and gooey.

                  Repeat the Process:

Continue assembling and cooking the remaining tortillas with the chicken mixture and vegetables until all the quesadillas are prepared.

                      Slice and Serve:

Once the quesadillas are cooked, transfer them to a plate and allow them to rest for about a minute before slicing them into wedges. Serve warm alongside your choice of optional toppings, such as sour cream, guacamole, fresh jalapeños, and cilantro for an extra burst of flavor.
