Ingredients

1 pound fresh salmon fillets, skin removed

1 tablespoon olive oil

Salt and pepper, to taste

1 head of butter lettuce or romaine, with leaves carefully separated and rinsed

1 cup fresh strawberries, hulled and sliced

2 tablespoons honey

1 tablespoon balsamic vinegar

1 tablespoon soy sauce

1 teaspoon fresh ginger, grated

1 tablespoon sesame seeds (optional)

Fresh cilantro or mint leaves for garnish (optional)

Instructions

Prepare the Strawberry Glaze: In a small saucepan over medium heat, add the sliced strawberries, honey, balsamic vinegar, soy sauce, and grated ginger. Stir the mixture occasionally as it cooks. After approximately 10 minutes, the strawberries will soften and the glaze will begin to thicken. Once thickened, remove from heat and let it cool slightly.

Cook the Salmon: Heat olive oil in a skillet over medium-high heat. While the skillet is heating, season the salmon fillets generously with salt and pepper on both sides. When the skillet is hot, place the salmon in the pan and cook for 4-5 minutes on each side, or until the salmon is opaque in the center and flakes easily with a fork. Once cooked, transfer the salmon to a plate and allow it to cool slightly.

Flake the Salmon: Once the salmon has cooled a bit, use a fork to gently flake it into bite-sized pieces, ensuring it remains moist.

Assemble the Wraps: Take a single lettuce leaf and place a portion of the flaked salmon in the center. Drizzle a generous amount of the strawberry glaze over the salmon. If you like, sprinkle with sesame seeds and add a few leaves of fresh cilantro or mint for a burst of flavor.

Serve: To enjoy, fold the lettuce leaf over the filling, creating a wrap. Serve these delightful wraps immediately as a refreshing appetizer or a light main dish!
