1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

1 red bell pepper, diced

1 yellow bell pepper, diced

1 cup broccoli florets

1 cup baby carrots, halved

2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Sea salt and freshly ground black pepper, to taste

Fresh parsley, finely chopped (for garnish)

Optional: Hummus or tzatziki for dipping

Preheat the oven: Begin by preheating your oven to 425°F (220°C) to ensure it’s hot enough for roasting.

    Prepare the vegetables: In a large mixing bowl, combine the halved cherry tomatoes, sliced zucchini, diced red and yellow bell peppers, broccoli florets, and halved baby carrots.

      Season the vegetables: Drizzle the extra virgin olive oil over the mixed vegetables, then evenly sprinkle the garlic powder, onion powder, smoked paprika, sea salt, and freshly ground black pepper. Gently toss the mixture with your hands or a spatula until the vegetables are thoroughly coated in the oil and seasonings.

        Spread on a baking sheet: Line a large baking sheet with parchment paper. Evenly spread the seasoned vegetables across the sheet, making sure they are spaced out to allow for proper roasting and caramelization.
