Ingredients

4 flatbreads (store-bought or homemade)

1 cup Alfredo sauce (store-bought or homemade)

1 medium zucchini, thinly sliced

1 bell pepper (any color), thinly sliced

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

1 cup shredded mozzarella cheese (or a cheese blend of your choice)

Fresh basil leaves, for garnish (optional)

Grated Parmesan cheese, for serving (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This high temperature will help achieve a crispy flatbread with beautifully roasted vegetables.

Prepare the Vegetables: In a large mixing bowl, combine the sliced zucchini, bell pepper, halved cherry tomatoes, and sliced red onion. Drizzle the olive oil over the vegetables and season with garlic powder, Italian seasoning, salt, and pepper. Toss everything thoroughly until the vegetables are evenly coated with the oil and seasonings.

Roast the Veggies: Spread the seasoned vegetables in a single layer on a baking sheet. Roast them in the preheated oven for about 20-25 minutes. Stir halfway through the cooking time to ensure even roasting until the vegetables are tender and lightly caramelized.

Prepare the Flatbreads: While the vegetables are roasting, arrange the flatbreads on another baking sheet. Spoon a generous amount of Alfredo sauce onto each flatbread, spreading it evenly all the way to the edges for a consistent flavor in every bite.

Add the Cheese: Evenly sprinkle the shredded mozzarella cheese over the sauce on each flatbread, ensuring that each flatbread gets a delightful cheesy topping.

Top with Roasted Veggies: Once the vegetables are finished roasting, take them out of the oven and evenly distribute them on top of the cheesy Alfredo flatbreads, allowing their vibrant colors to shine.

Bake the Flatbreads: Return the loaded flatbreads to the oven and bake for an additional 10-12 minutes. Keep an eye on them until the cheese is melted, bubbly, and golden brown.

Garnish and Serve: Once baked, remove the flatbreads from the oven. For an elegant touch, garnish with fresh basil leaves and a light sprinkle of grated Parmesan cheese, if desired. Slice into pieces and serve warm for a delightful meal!

                  Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 4

Presentation Tips: For a more appealing presentation, serve the flatbreads on a large wooden board, drizzled with a little extra olive oil or a balsamic glaze for added flavor. Use the fresh basil as a colorful garnish arranged attractively on top.
