Ingredients

For the Roasted Garlic Hummus:

1 head of garlic

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

3 tablespoons fresh lemon juice (about 1 large lemon)

2 tablespoons extra virgin olive oil

1 teaspoon ground cumin

Salt, to taste

2-3 tablespoons cool water (as needed for consistency)

Fresh parsley, finely chopped, for garnish (optional)

For the Pita Chips:

4 whole wheat pita breads, cut into triangles

2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt, to taste

Instructions

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Using a sharp knife, cut the top off the head of garlic to expose the individual cloves. Drizzle them with a small amount of olive oil to add flavor and moisture, then wrap the head of garlic tightly in aluminum foil.

        - Place the wrapped garlic in the oven and roast for 30-35 minutes. You're looking for the cloves to become soft and caramelized, which enhances their sweetness. Once roasted, let the garlic cool for a few minutes before squeezing the soft cloves out of their skins into a bowl.

          Prepare the Hummus:

            - In a food processor, combine the squeezed roasted garlic cloves, drained chickpeas, tahini, fresh lemon juice, olive oil, ground cumin, and a pinch of salt.

              - Process the mixture until it’s creamy and smooth. If the hummus is too thick for your liking, gradually add water by the tablespoon while blending until you reach your desired consistency. Taste the hummus and adjust the salt or lemon juice, if needed.

                Prepare the Pita Chips:

                  - While the hummus is blending, increase your oven temperature to 375°F (190°C).

                    - In a mixing bowl, toss the pita triangles with olive oil, garlic powder, smoked paprika, and a sprinkle of salt. Ensure each triangle is evenly coated for maximum flavor.

                      - Lay the pita triangles in a single layer on a baking sheet. Bake them in the preheated oven for 10-12 minutes, or until they turn golden and crispy. Remember to flip them halfway through the baking time for even crisping.

                        Serve:

                          - Spoon the creamy hummus into a serving bowl, then drizzle a little extra virgin olive oil over the top and garnish with finely chopped fresh parsley if you like. Arrange the warm, crunchy pita chips around the hummus for dipping and enjoy the delightful contrast in textures!
