Quick Skillet Apple Crisp with a Healthy Twist

Ingredients
  

3 large apples, peeled, cored, and sliced (Granny Smith or your preferred type)

1/2 cup rolled oats

1/3 cup whole wheat flour

1/4 cup maple syrup (or honey)

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 cup melted coconut oil or unsalted butter

1/4 cup chopped walnuts or pecans

Pinch of salt

Vanilla ice cream or yogurt for serving (optional)

Instructions
 

In a large skillet, warm over medium heat. Add the apple slices and sprinkle them with cinnamon and nutmeg. Mix thoroughly to coat the apples with the spices and cook for approximately 5 minutes, or until they start to soften.

    While the apples are cooking, in another bowl, mix together the rolled oats, whole wheat flour, chopped nuts, melted coconut oil (or butter), maple syrup (or honey), and a pinch of salt. Stir until the mixture is crumbly but well blended.

      After the apples have softened a bit, take the skillet off the heat. Evenly distribute the oat mixture over the apples to create a topping.

        Place the skillet back on the heat and cover it with a lid. Cook for another 10-12 minutes, allowing the topping to brown and the apples to soften further.

          Once finished, remove from the heat and allow it to cool slightly before serving. Dish out portions and add a scoop of vanilla ice cream or yogurt on top if you like.
