Ingredients

1 cup water

1/2 cup unsalted butter

1 tablespoon granulated sugar

1/4 teaspoon salt

1 cup all-purpose flour

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1 cup granulated sugar (for coating)

1 tablespoon pumpkin spice (for coating)

Oil for frying (vegetable or canola)

Instructions

Prepare the Dough: In a medium-sized saucepan, combine the water, butter, granulated sugar, and salt. Place over medium heat and bring to a rolling boil, stirring occasionally to ensure everything is well incorporated. Once boiling, promptly remove from heat and carefully stir in the flour with a wooden spoon. Mix until a cohesive dough forms that pulls away from the sides of the pan.

Combine Ingredients: Allow the dough to cool for about 5 minutes. Once slightly cooled, incorporate the eggs one at a time, mixing thoroughly after each addition to achieve a silky texture. Add the vanilla extract along with the ground cinnamon, nutmeg, and ginger. Stir until the mixture is smooth and well combined.

Heat the Oil: In a deep skillet or frying pan, pour in about 2 inches of vegetable or canola oil and heat over medium heat. Use a thermometer to monitor the temperature, aiming for 350°F (175°C) for optimal frying.

Pipe the Churros: Transfer the dough into a piping bag fitted with a star tip. When the oil reaches the desired temperature, pipe strips of dough about 4-6 inches long directly into the hot oil, using kitchen scissors to cut them off. Fry the churros in small batches, leaving space between them to ensure they cook evenly without overcrowding the pan.

Fry Until Golden: Fry the churros for approximately 2-3 minutes per side, or until they are beautifully golden brown. Utilizing a slotted spoon, carefully transfer the fried churros to a plate lined with paper towels to absorb any excess oil.

Coat in Sugar: While the churros are still warm, mix together the granulated sugar and pumpkin spice in a shallow bowl. Roll each churro in the sugar mixture, ensuring they are evenly coated for that perfect sweet finish.

Serve Warm: Serve the warm churros immediately with a delectable pumpkin spice dipping sauce. To make the sauce, mix together 1/2 cup cream cheese, 1/4 cup powdered sugar, 1 teaspoon vanilla extract, and 1 teaspoon pumpkin spice until smooth and creamy.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 12 churros

                  - Presentation Tips: Arrange the churros on a serving platter, dust lightly with additional pumpkin spice sugar for an attractive presentation. Include a small bowl of the dipping sauce in the center for an inviting touch!
