Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1 cup pumpkin puree (canned or freshly made)

1/2 cup granulated sugar

1/2 cup brown sugar, tightly packed

1/2 cup vegetable oil

1/4 cup milk (dairy or a plant-based alternative)

2 large eggs

1 teaspoon pure vanilla extract

1/2 cup chopped walnuts or pecans (optional for crunch)

1/4 cup raisins or chocolate chips (optional for sweetness)

Instructions

Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by either lining it with paper liners or lightly greasing it with non-stick spray to ensure easy removal of the muffins later.

In a large mixing bowl, sift together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. Whisk these dry ingredients together until they are evenly mixed and no lumps remain.

In a separate bowl, add the pumpkin puree, granulated sugar, brown sugar, vegetable oil, milk, eggs, and vanilla extract. Whisk these ingredients together vigorously until the mixture is smooth and cohesive.

Gradually pour the wet mixture into the bowl of dry ingredients. Gently stir with a spatula or wooden spoon just until the ingredients are combined. Be careful not to overmix; it’s okay if the batter has some lumps as this will keep the muffins tender.

If you wish to include them, fold in the chopped nuts and raisins or chocolate chips at this stage for an extra dimension of flavor and texture.

Using a spoon or a measuring cup, carefully distribute the batter into the prepared muffin cups, filling each cup about two-thirds full to allow room for rising.

Place the muffin tin in the preheated oven and bake for 18-20 minutes. To check for doneness, insert a toothpick into the center of a muffin; it should come out clean with a few moist crumbs attached.

Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes. After that, gently transfer the muffins to a wire rack to cool completely for the best texture.
