Ingredients

1 loaf of brioche or challah bread (approximately 10-12 slices, cut into cubes)

2 cups canned pumpkin puree

6 large eggs

2 cups of milk (you can use whole or almond milk)

1/2 cup brown sugar, packed

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup chopped pecans or walnuts (optional for added texture)

1/2 cup maple syrup (for drizzling)

Instructions

Prepare the Bread: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray. Cut the brioche or challah bread into equal-sized cubes and spread them evenly in the bottom of the prepared dish.

Combine Ingredients: In a large mixing bowl, whisk together the pumpkin puree, eggs, milk, brown sugar, vanilla extract, ground cinnamon, nutmeg, ground ginger, and salt. Mix until everything is smoothly combined, ensuring there are no lumps.

Mix Together: Pour the creamy pumpkin mixture evenly over the cubed bread, making sure to cover all pieces. Using a spatula, gently press down on the bread cubes to help them soak up the mixture thoroughly.

Add Nuts: If you’re opting for nuts, sprinkle them evenly across the top of the casserole for a delightful crunch.

Chill: Cover the baking dish tightly with plastic wrap and place it in the refrigerator. Allow it to chill for at least 1 hour, or preferably overnight. This allows the flavors to meld and the bread to absorb the custard base.

Bake: Remove the plastic wrap and place the casserole in the preheated oven. Bake for 40-45 minutes, or until the top is golden brown and the center is fully set. A toothpick inserted in the center should come out clean.

Serve: Once baked, let the casserole cool for about 5-10 minutes before slicing into squares. Drizzle generously with maple syrup just before serving.

Enjoy: For an extra touch of indulgence, serve alongside fresh fruit or a dollop of whipped cream.

                  Prep Time: 20 minutes | Total Time: 1 hour 10 minutes | Servings: 8-10

Presentation Tips: Serve each slice on individual plates, garnished with a sprinkle of cinnamon and a few pecans or walnuts on the side. A small pitcher of warm maple syrup makes for a beautiful addition to the breakfast table!
