1/2 cup unsalted butter, cut into pieces

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup pumpkin puree

2 large eggs

1 tablespoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

Vegetable oil (for frying)

1/2 cup granulated sugar

1 tablespoon ground cinnamon

Prepare the Dough: In a medium saucepan, combine the water, pieces of butter, granulated sugar, and vanilla extract. Heat over medium heat until the mixture comes to a rapid boil, stirring occasionally until the butter is fully melted. Once boiling, remove the saucepan from the heat.

    Mix in the Flour: Quickly add the all-purpose flour to the saucepan. Stir vigorously with a wooden spoon until a dough forms, pulling away from the sides of the pan and forming a cohesive ball.

      Incorporate Pumpkin and Eggs: Allow the dough to cool for about 5 minutes. Once slightly cooled, add the pumpkin puree and mix until fully integrated. Then, one at a time, beat in the eggs, ensuring each egg is well incorporated before adding the next. The final dough should be smooth and slightly sticky.

        Season the Dough: Add the ground cinnamon, nutmeg, and salt to the dough. Stir well to evenly distribute the spices throughout.
