Ingredients

8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

2 cups whole milk

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup ripe peaches, diced (fresh or canned, drained)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon nutmeg

1/4 cup breadcrumbs

1 tablespoon olive oil

1 tablespoon fresh thyme leaves (optional, for garnish)

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a rapid boil. Add in the elbow macaroni and cook according to the package instructions until al dente. Once cooked, drain the pasta in a colander and set it aside.

Make the Cheese Sauce: In a medium saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the all-purpose flour. Cook this mixture, known as a roux, for about 1 minute, stirring constantly, until it reaches a light golden color.

Add Milk: Gradually pour in the whole milk while whisking continuously to avoid lumps. Bring this mixture to a gentle simmer, allowing it to thicken for approximately 3-4 minutes, stirring occasionally.

Incorporate Cheese: Reduce the heat to low and gradually add the shredded sharp cheddar and Gruyère cheese to the thickened milk mixture. Stir until the cheeses are completely melted and the sauce is smooth. Season the cheese sauce with salt, black pepper, and nutmeg.

Mix in Peaches: Gently fold the diced peaches into the cheese sauce, ensuring they are well incorporated. Then, add the cooked macaroni to the pot and carefully mix until every piece of pasta is coated in the luscious cheese sauce.

Prepare for Baking: Preheat your oven to 350°F (175°C). Grease a suitable baking dish with butter or non-stick spray, then transfer the mac and cheese mixture into the dish, spreading it out evenly.

Breadcrumb Topping: In a small bowl, combine the breadcrumbs and olive oil. Mix the two until the breadcrumbs are thoroughly coated in oil. Evenly sprinkle this mixture over the top of the mac and cheese to create a deliciously crispy topping.

Bake: Place the baking dish into the preheated oven and bake for 25-30 minutes. You’re looking for a golden brown and bubbly texture on top of the mac and cheese.

Serve: Once baked, carefully remove the dish from the oven and allow it to cool for a few minutes. If desired, garnish with fresh thyme leaves for a touch of color and flavor. Serve hot, and enjoy the delightful blend of sweet peaches and savory cheese!
