One-Pan Lemon Garlic Shrimp and Broccoli

1 pound (450g) large shrimp, peeled and deveined

2 cups broccoli florets

3 tablespoons olive oil, divided

4 cloves garlic, minced

Juice and zest of 1 large lemon

1 teaspoon red pepper flakes (adjust according to your heat preference)

Salt and black pepper to taste

1 teaspoon dried oregano

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges for serving

Prepare the Shrimp: In a medium-sized mixing bowl, combine the peeled and deveined shrimp with the juice and zest of the lemon, minced garlic, red pepper flakes, and 2 tablespoons of olive oil. Season the mixture with a pinch of salt and black pepper. Toss to coat the shrimp evenly, then cover the bowl and let it marinate for approximately 15 minutes while you prepare the broccoli.

    Sauté the Broccoli: In a large skillet or wok, heat the remaining 1 tablespoon of olive oil over medium heat. Once the oil is hot, add the broccoli florets to the skillet. Sauté the broccoli for about 4-5 minutes, stirring frequently, until they are bright green and slightly tender but still crisp. Season with salt, black pepper, and dried oregano. Once cooked, remove the broccoli from the skillet and set it aside on a plate.

      Cook the Shrimp: In the same skillet, add the marinated shrimp along with the marinade left in the bowl. Cook the shrimp for about 2-3 minutes on each side, or until they turn pink and are cooked through. Be mindful not to overcook the shrimp, as they can become rubbery if left too long.

        Combine & Finish: After the shrimp are cooked, return the sautéed broccoli to the skillet. Toss all the ingredients together gently, allowing everything to warm through for an additional 1-2 minutes. Adjust the seasoning if needed, adding more salt or pepper according to your taste.

          Garnish & Serve: Remove the skillet from the heat. Sprinkle the dish with fresh parsley for a pop of color and flavor. Serve immediately with lemon wedges on the side for an extra burst of zest.
