1 lb ground beef or ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (your choice of color)

1 cup long grain or jasmine rice

2 cups low-sodium chicken or vegetable broth

1 can (15 oz) black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes with green chilies

1 tablespoon taco seasoning (adjust to taste)

1 teaspoon smoked paprika

Salt and black pepper, to taste

1 cup corn (fresh, frozen, or canned)

1 ½ cups shredded cheese (your choice of cheddar, Monterey Jack, or a cheese blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Brown the Meat: In a large skillet, heat over medium heat. Add the ground beef or turkey. Cook until well browned, breaking the meat apart with a spatula as it cooks. If there is excess fat, carefully drain it from the pan.

    Sauté Aromatics: To the skillet, add the diced onion, minced garlic, and diced bell pepper. Sauté the mixture for approximately 5 minutes until the vegetables have softened and the onion becomes translucent.
