Ingredients

1 lb (450 g) ground beef

1 cup uncooked long-grain rice

1 can (15 oz) diced tomatoes (with juices)

1 cup beef broth

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup frozen peas and carrots mix

2 cups shredded cheddar cheese

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Brown the Beef: In a large skillet or an oven-safe pan, heat it over medium heat. Add the ground beef and cook it, breaking it up with a spatula until it's well-browned and no longer pink. If there is excess fat, drain it off to reduce greasiness.

Sauté Vegetables: Add the finely chopped onion and minced garlic to the beef. Sauté the mixture for about 3-4 minutes, stirring often, until the onion is translucent and fragrant, allowing the flavor to develop.

Mix in Seasonings: Pour in the Worcestershire sauce, then sprinkle in the smoked paprika, dried oregano, salt, and pepper. Stir all the seasonings into the beef and onion mixture, ensuring an even distribution of flavor.

Add Rice and Liquid: Introduce the uncooked rice to the pan, followed by the can of diced tomatoes (including their juices) and the beef broth. Stir well to ensure that all ingredients are thoroughly combined.

Incorporate Veggies: Gently fold in the frozen peas and carrots mix. Increase the heat slightly to bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pan with a lid and let it cook for approximately 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.

Cheesy Goodness: After the rice is fully cooked, remove the lid and evenly sprinkle the shredded cheddar cheese over the top. Cover the pan again and allow the cheese to melt on low heat for about 5 minutes. For a deliciously bubbly and golden finish, place the pan under the broiler for 2-3 minutes.

Garnish and Serve: Once the cheese has melted and is slightly bubbly, remove the pan from the heat. Let it sit for a few minutes to settle. Optionally, garnish with freshly chopped parsley before serving. Enjoy this delightful one-pan cheesy beef and rice casserole hot!
