8 oz pasta (fusilli or penne recommended)

1 can (15 oz) tuna in water, drained well

1 cup cherry tomatoes, halved

1 cup cucumber, diced into small pieces

1/2 red onion, finely chopped

1/2 bell pepper (any color), diced

1/4 cup black olives, sliced (optional)

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

Juice of 1 large lemon

3 tablespoons olive oil

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until it reaches al dente texture. Once cooked, drain the pasta and rinse it under cold water to stop further cooking and cool it down. Set aside in a large mixing bowl.
