3 cups graham cracker cereal (such as Cinnamon Toast Crunch)

1 cup mini marshmallows, plus extra for topping

1 cup semi-sweet chocolate chips, plus extra for topping

1/2 cup unsweetened almond butter (or your preferred nut butter)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

A pinch of salt

Non-stick spray for greasing the pan

Prepare the Pan: Begin by lining an 8x8 inch square baking dish with parchment paper. Allow extra paper to hang over the edges for easy removal later. To prevent sticking, lightly coat the parchment with non-stick spray.

    Melt the Mixture: In a medium saucepan set over low heat, combine the almond butter, honey (or maple syrup), vanilla extract, and a small pinch of salt. Stir the mixture constantly for about 3-5 minutes until it becomes smooth and well-blended, ensuring nothing sticks to the bottom of the pan.

      Combine Ingredients: Once smooth, remove the saucepan from the heat. Immediately add the graham cracker cereal, 1 cup of mini marshmallows, and 1 cup of chocolate chips into the warm mixture. Gently stir until all the ingredients are thoroughly coated with the almond butter mixture.

        Press into the Pan: Transfer the entire mixture into the prepared baking dish. Using a spatula or your dampened fingers (to prevent sticking), firmly press the mixture down evenly into the base of the dish to ensure it holds together.

          Add Toppings: Top the pressed mixture with additional mini marshmallows and chocolate chips, pressing them down lightly so they stick and meld into the bars.

            Chill and Set: Cover the dish tightly with plastic wrap and place it in the refrigerator. Let it chill for at least 1 hour so the bars can firm up nicely.
