2 medium zucchinis

1/2 cup black beans, rinsed and drained

1/2 cup shredded cheddar cheese

1/4 cup finely chopped red onion

1/4 cup fresh cilantro, chopped

1 large egg

1/2 cup breadcrumbs (preferably panko for extra crunch)
