Ingredients

For the Taco Bowls:

8 oz spaghetti

1 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp chili powder

1/2 tsp ground cumin

Salt and pepper to taste

4 small flour tortillas

1 cup shredded cheddar cheese

For the Taco Filling:

1 lb ground beef (or ground turkey for a lighter option)

1/2 cup onion, finely chopped

1 bell pepper, finely diced (any color works!)

1 packet taco seasoning (store-bought or homemade)

1 cup diced tomatoes (fresh or canned)

1/2 cup black beans, drained and rinsed (optional but recommended)

2 tbsp fresh cilantro, chopped (for garnish)

For Toppings:

1 cup shredded lettuce

1/2 cup sour cream

1 avocado, diced

Salsa of choice to serve

Instructions

Cook the Spaghetti:

    - In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Once cooked, drain the spaghetti and set it aside in a large mixing bowl.

      Prepare the Taco Filling:

        - Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the finely chopped onions and bell peppers, sautéing them until softened, about 5 minutes.

          - Add the ground beef (or turkey) to the skillet. Cook until fully browned, breaking it apart with a spatula as it cooks. Drain any excess fat from the skillet.

            - Stir in the taco seasoning, diced tomatoes, and black beans (if using). Allow the mixture to simmer for 5-7 minutes, stirring occasionally, until everything is heated through and the flavors meld beautifully.

              Flavor the Spaghetti:

                - In a separate mixing bowl, toss the drained spaghetti with garlic powder, onion powder, chili powder, ground cumin, and season with salt and pepper to taste. Make sure the spaghetti is evenly coated with all the spices.

                  Assemble Taco Bowls:

                    - Preheat your oven to 375°F (190°C).

                      - Lightly spray a muffin tin with non-stick cooking spray. Gently press a flour tortilla into each muffin cup to create a bowl shape. If needed, fold the edges down carefully.

                        - Layer each tortilla bowl with a generous amount of the seasoned spaghetti, then top it with a hearty scoop of the taco filling. Finally, sprinkle a generous amount of shredded cheddar cheese on top of each bowl.

                          Bake the Taco Bowls:

                            - Transfer the muffin tin to the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and the tortillas are slightly crispy.

                              Add Toppings:

                                - Once baked, remove the taco bowls from the oven and allow them to cool for a minute so they are easier to handle.

                                  - Carefully lift each mini taco bowl from the muffin tin. Top off each bowl with a handful of shredded lettuce, diced avocado, a dollop of sour cream, and a drizzle of your favorite salsa. Finish with a sprinkle of fresh cilantro for added flavor.

                                    Serve and Enjoy:

                                      - Serve the mini spaghetti taco bowls warm and enjoy this delightful fusion of flavors that combines the best of two beloved dishes!
