Ingredients

2 medium zucchinis, sliced into 1/2-inch thick rounds

1 cup feta cheese, crumbled

1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)

1/4 cup cherry tomatoes, finely chopped

1/4 cup Greek yogurt

1 tablespoon olive oil

1 tablespoon fresh lemon juice

Salt and pepper to taste

8 small whole-grain slider buns

1 cup fresh arugula or baby spinach

Optional: Balsamic glaze for drizzling

Instructions

Preheat the Grill: Begin by preheating your grill or grill pan to medium-high heat to ensure it's hot enough to achieve ideal grill marks on the zucchini.

Prepare Zucchini: Using a paper towel, gently pat the zucchini slices to remove excess moisture. Coat each side of the slices with olive oil and season generously with salt and pepper for enhanced flavor.

Grill Zucchini: Place the seasoned zucchini slices directly onto the hot grill. Grill for approximately 3-4 minutes on each side, or until you see distinct grill marks and the zucchini slices are tender yet still firm. Remove them from the heat and set aside.

Mix Feta Filling: In a mixing bowl, combine the crumbled feta cheese, chopped dill, and cherry tomatoes. Pour in the lemon juice and Greek yogurt, stirring the mixture until it's well combined and creamy. Taste and adjust seasoning with additional salt and pepper if needed.

Assemble Sliders: Carefully slice each slider bun in half. On the bottom half of each bun, spread a generous spoonful of the creamy feta mixture, place a grilled zucchini slice on top, and add a handful of fresh arugula. Finish by placing the top half of the bun over the filling.

Serve: Arrange the assembled sliders beautifully on a serving platter. For an extra touch of flavor and elegance, consider drizzling balsamic glaze over the top just before serving.

Enjoy: Serve the sliders warm to enjoy a delightful burst of Mediterranean flavors that are sure to please your taste buds!
