Ingredients

For the Apple Filling:

3 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 tablespoon fresh lemon juice

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon all-purpose flour

For the Crust:

1 cup all-purpose flour

1/4 teaspoon salt

1/4 cup granulated sugar

1/2 cup unsalted butter, chilled and cut into small cubes

1-2 tablespoons cold water

For the Crumble Topping:

1/2 cup rolled oats

1/4 cup packed brown sugar

1/4 cup all-purpose flour

1 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it’s hot and ready for baking.

Prepare the Apple Filling: In a mixing bowl, combine the diced apples with lemon juice, granulated sugar, ground cinnamon, nutmeg, and all-purpose flour. Toss the mixture until all the apple pieces are well coated. Set the bowl aside to allow the flavors to meld.

Make the Pie Crust: In a large mixing bowl, combine 1 cup of flour with salt and granulated sugar. Add the chilled, cubed butter to the bowl. Use a pastry cutter, fork, or your fingers to blend the ingredients until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing gently until a soft dough forms. Be careful not to overwork the dough.

Shape the Crusts: On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Use a 3-inch round cutter to cut out circles. Carefully press each circle into the cups of a greased muffin tin, ensuring the dough covers the bottom and sides to form mini crusts.

Add the Apple Filling: Spoon the prepared apple filling evenly into each pastry shell, filling them about three-quarters full to allow room for the crumble topping.

Prepare the Crumble Topping: In a separate bowl, combine the rolled oats, brown sugar, flour, and ground cinnamon. Pour in the melted butter and mix until the mixture is crumbly. Distribute the crumble topping evenly over the apple filling in each cup.

Bake the Cups: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the crumble topping is golden brown and the apples are tender and bubbling.

Cool and Serve: Allow the mini apple pie crumble cups to cool in the muffin tin for a few minutes before gently removing them. Serve warm, optionally with a scoop of creamy vanilla ice cream or a dollop of whipped cream for extra indulgence.
