Ingredients

2 cups cooked shredded chicken (use rotisserie or homemade)

1 cup shredded cheese (choose from cheddar, Monterey Jack, or a Mexican blend)

1/2 cup salsa (select mild or spicy based on your preference)

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

12 small corn tortillas

Cooking oil, for frying

Fresh cilantro, chopped (for garnish)

Sour cream and guacamole (for serving)

Instructions

Prepare the Filling: In a medium bowl, thoroughly combine the shredded chicken, shredded cheese, salsa, ground cumin, chili powder, garlic powder, onion powder, salt, and pepper. Ensure the mixture is well-blended so each bite is flavorful.

Heat the Tortillas: Preheat a skillet over medium-low heat. Warm each corn tortilla for approximately 30 seconds on each side until they become soft and pliable. To keep the tortillas warm while you work, consider covering them with a damp cloth.

Assemble the Taquitos: Take one warmed tortilla and place about 2 tablespoons of the chicken filling in the center. Carefully roll the tortilla tightly around the filling, securing it with a toothpick if necessary. Repeat this process until all tortillas are filled and rolled.

Fry the Taquitos: In a deep skillet or heavy frying pan, add enough cooking oil to cover the bottom by about 1/2 inch. Heat the oil over medium heat until it shimmers. Carefully add the rolled taquitos seam-side down, frying them in batches of 3-4 at a time. Cook for 3-4 minutes on each side, or until they are beautifully golden brown and crispy.

Drain: Once cooked, transfer the taquitos to a plate lined with paper towels to absorb any excess oil, ensuring they stay crispy.

Serve: Present the crispy taquitos on a colorful serving platter and garnish with fresh chopped cilantro for a pop of color. Offer sour cream and guacamole on the side for dipping, enhancing the overall flavor experience.
